Tomato Confit

2 pints Blue Ox Farm grape or cherry tomatoes 1 cup olive oil 2 sprigs  fresh oregano (sub with ½ tsp dried) 1 Tbsp. sugarkosher salt and black pepper Combine all ingredients in a small bowl and mix well.  Check seasonings.
